Having been asked whether there are more ways to serve Kale than in a smoothie, I thought I would share some further wellness ways with Kale today………….
Kale is a very versatile vegetable and since it is such a nutritional powerhouse packed full of vitamins, minerals and antioxidants, it is totally worth the effort to find a way that you and your family can enjoy eating this vegetable.
My first way is simple – make Kale chips! Kale Chips – now this is one for my kids and better than potato chips! Vegetable chips have become popular but making your own in your kitchen is so much healthier than buying them at the store and you can make the preparation into a family event.
Think seasons when you prepare food and as we head into the cooler and cold months of the year in the US, it is time to think of soups and casseroles, a perfect opportunity to incorporate kale.
Kale Soup – I like the idea of combining Kale with Portuguese sausage, chick-peas and potato for a spicy, warming soup. This would make a great nutritious meal on any cold evening.
Another warm way to serve Kale is to saute it ……fry the onion and garlic before adding the kale…….
Salad – serve Kale as a slaw instead of cabbage and with carrots and dressing. This recipe is made with orange and lemon juice added to the slaw.
As a pesto with sunflower seeds………………. Pesto is not just reserved for basil. You can then put this pesto on bread or as a topping or dip.
Just as you may use cabbage or spinach, so you can use Kale in the same way. You can add it as a topping to pizza, put it into pasta sauces and just serve it steamed as vegetable. If you haven’t yet had the opportunity to read my article on the health benefits of Kale as a vegetable, be sure to. I hope that I have inspired you to incorporate Kale in some way into your family’s life.
Remember: Investment in your diet today will ensure that your family can look forward to enjoying tomorrow with you!

Thank you, Clare, for providing these great suggestion to prepare this nutritious vegetable.
I appreciate the links to the recipes. The chips seem to be so easy to make.
My mother used to cook it and she had this rule to only use it when it had the first frost, I don’t know why. It was a lovely meal, especially since she grew it in her garden.

I never would have known the vast ways of eating this veggie. I rarely eat that yet we love our greens. Collard and green beans cabbage and lots of others. I kept away from this wonderful dish you are presented .
I am going to share this with my vegan friend who is going to love it.
Thanks for keeping us health and balanced. You do so much for our communities and I do appreciate it.

Hi Clare,
I’m a big kale lover and I find all kind of ways to enjoy it in salads, soups, smoothies, snacks, and mixed with other leafy greens. One of my favorite recipes is on my blog and I make a Curry Coconut Kale that is cooked on the stovetop and is so easy and tasty.
Thanks for all the great suggestions on how to incorporate this important superfood into our diet!
Best,
Shelley
